Even if you just compare the journal when Arthur did it to John, Arthur is more artistic, more literate and generally more eloquent than John. Arthur’s weakness is he followed Dutch and Hosea too much. By the time of RDR1 John has over a dozen years of living his own life.

A sub theory to this is that Ross wasn't the one who ordered the attack but instead the governor of Texas Nate John's.Nate is mentioned in several side quests as corrupt and ineffective.

So Ross put Marston in tough spot. He had Jailed his wife Abigail (likely on prostitution charges) and should he run, Jack would have been left orphaned and Abigail rotting in a prison cell. Since John cared for his family, he was pretty much forced into doing Ross' dirty work so that the agency wouldn't have to and focus it's resources elsewhere.

RDR1 John was inherently bad, but progressively changed his ways in a much more subtle and believable way. His personality stayed relatively the same, but the actions and sacrifices he made in the end are what made him such a good anti-hero.
